Le manoir presque magique de Binissues conserve la Minorque d'antan toujours vivante. Sa façade de la couleur des boutons-d'or ressort du reste du paysage de la belle campagne, invitant tous les visiteurs à explorer son intérieur tempéré, sa ferme et son musée. Une bonne façon d'obtenir un avant-goût de la vie à la campagne d'autrefois.

Vous serez accueillis à demeure seigneuriale par le propriétaire du manoir, son fermier et sa femme. Ensemble, ils vous montreront comment cette ferme fonctionnait il y a déjà plusieurs générations. Vous verrez comment les vaches sont traites et comment le lait est ensuite fermenté pour devenir le fameux fromage de Mahon. Vous verrez aussi comment le pain minorquin authentique est cuit dans le four en pierre.

Visitez son musée des sciences naturelles ; les enfants vont adorer tous les insectes et il y a aussi un espace enfants avec des jeux traditionnels en bois. Il y a des activités pour tous les goûts et même pour les plus grands ; c'est une expérience amusante et dépaysante pour toute la famille. Binissues est unique : elle est Minorque.

A uniquely Menorquin touch is the ruby-red paint on these houses.'First up is a glass-bottom boat trip in Mahon harbour – the second largest in the world. Glide between fortified islets and admire the opulent villas lining the waterfront on either side. Some date from the 18th century, when Menorca was a British colony. Next, it's on to the old Xoriguer gin distillery for a guided visit. Menorca's favourite tipple has been made here, using the same recipe, since 1736 – yet another symbol of the island's British heritage.There's also free time to wander around Mahon under your own steam, admiring its Georgian town houses, baroque churches, palm-lined squares and narrow, cobbled streets. Head to the centrally located Plaza del Carme, where there's a market of vendors hawking everything from cured meats to fresh fruit under the cloisters of a 17th-century convent. The local square-shaped cheese is highly regarded throughout Spain.

It takes just 10 minutes to walk around it but much longer to absorb its quaint perfection.'The fun kicks off with a boat trip around Mahon harbour. At 5km long, it's one of the world's largest natural harbours. It's fringed by historic buildings, fortifications and dotted with islands. Back on dry land, there's a tour of Mahon town followed by some free time. Nicola adds, ‘Reminders of the century-long British rule are still visible to this day – you can see sash and bow windows, door latches and handles just as you would in the UK.'Next, you'll journey along the coastal road to Binibeca. This fairytale-like village is packed with narrow alleys of sugar-cube houses that cascade down to the harbour. Just a little further east along the coast is the Cova d'en Xoroi, a cave set in a cliff face. Sip on a drink as you take in the sea views from Menorca's coolest bar.
