This tour will allow you to appreciate the entire Stefanago Estate, the real life around the Castle, fields, the orchards and organic farms, the tasting of the great Cru di Pinot Nero and traditional local wines such as Bonarda and Spumante Metodo Classico Ancestrale.
The Stefanago Castle winery is located in Lombardy, on the hills of theOltrepo Pavese, 400 meters above sea level. Antonio and Giacomo Baruffaldi have long chosen organic farming: a constant and careful work in the vineyard, which they monitor personally, to produce healthy and natural grapes that are harvested at the right stage of ripening and that are the key ingredient for the production of wines that "speak" for the land where they are born. In the cellar an accurate and gentle work to preserve the quality obtained in the vineyard: respecting the natural inclinations of each wine, following the time for their evolution, helping with the refinement in wooden barrels of various essences and sizes, seeking ancient wine-making methods.
The tour includes a visit to the estate's different agricultural activities, with a particular focus on the vineyards, and explanations of organic farming techniques; you'll then go to the ancient cellars of the Stefanago Castle, the perfect environment for ageing wine, and then conclude with a guided tasting during which you'll be able to taste wines of great value. One of the highlights is the Spumante Metodo Classico, of great elegance and an outstanding aromatic complexity, obtained through an ancestral a wine-making system. The grapes used for the Pinot Nero are harvested when fully ripe and fermentation stops at the first signs of cold weather, the arrival of spring favors the awakening of the yeasts, so the second fermentation starts spontaneously inside the bottle. 24 months later it's time for the handmade "disgorging" of the yeasts.
At the feet of the Stefanago Castle, in one of the estate's farmhouses, the Stuvenagh brewery offers dishes that are mostly prepared with organic ingredients, accompanied with the company's wines and craft beers. You can also combine the visit to the castle with the lunch at the brewery (not included in the price).
