Learn how Chinese food slots seamlessly into Vietnamese cuisine as you try dry squid porridge known as chao muc, and xa xui, a Cantonese-style barbecue pork.
We continue with a sample of banh bo banh tieu – a sweet sponge cake that's a firm favourite with children – and a strong cup of Saigonese coffee. Moving on for more magnificent eats, there's barbecue meatballs and rice cakes, deep-fried tofu with lemongrass or salted egg yolk with green chilli, all washed down with an ice-cold Saigon beer.
