Ribaldone boasts many collaborations over the years as an executive chef and consultant of Eataly Tokyo as well as other essential restaurants. In 2013 he worked as a consultant as F&B Director for JSH Hotels & Resorts and since June 2014 he has opened in Alessandria 'I Due Buoi,' gaining a Michelin star in the 2016 edition. In 2015 he took the role of executive chef of Identità Expo kitchens. And in March 2017 announced: he was leaving Alessandria for a new adventure, 'Osteria Arborina,' in the homonymous relais in La Morra, in the Langhe region. Andrea Ribaldone's cuisine starts by choosing the best raw materials from the traditional recipes of the area, which thanks to his creativity and expertise are revisited with imagination. The chef defines his kitchen as 'solar.' Suppliers from the local area select each food item carefully.
The cooking course will take place on the panoramic terrace (sheltered in case of bad weather) and will illustrate the preparation of three recipes per session by the Arborina staff - tasting of the dishes you prepared paired with wine and glass selected by the sommelier Davide Canina.
