At 1,160 metres above sea level, it marks the beginning of the foothills of the Atlas Mountains. It's a six-minute journey each way, so you've time to grab your camera and take in the views. At the top, your guide will show you around the phoenix-like fortress, which has been forced to resurrect twice after earthquakes devastated the original structures in 1755 and1960. Back down in the city, your next stop is the Argan cooperative. Here, you'll discover the secrets behind the production of authentic bio Argan oil – a staple in local cuisine and cosmetics.The final part of your day is a trip to one of Morocco's largest markets, Souk El Had. Try not to be intimidated by its 6,000 shops and stalls – it's a labyrinth, but your local guide is your superpower here. They'll help lead you through the narrow allies stacked high with a mix of colourful ceramics, lanterns, rugs and more. Take your time to enjoy the bustling atmosphere, breathe in the scent of fresh mint and cumin and pause for cup of tea before you do as the locals do and join in with some haggling.
