Join an Indian host in their kitchen in Delhi, and follow along step-by-step as together you make a gravy-based vegetarian dish and masala chai. Your host, who will tell you about their home and life in India, and show you around their kitchen. You’ll learn about authentic Indian food and ingredients and secret tricks that you can use yourself when cooking at home!
You’ll start by making a cup of masala chai, which is India’s national drink. You’ll then move onto cooking an authentic Indian gravy-based dish called Kadai paneer (or tofu), along with paratha, Indian bread. As you cook, your host will explain all the ingredients and give you easy-to-follow step-by-step instructions. Your host will also answer any questions you have about the cuisine, customs and culture of India.
To really help you feel like you’re in India, we’ll have some of our favorite Bollywood music playing in the kitchen, and your host will teach you a few Hindi words and phrases. Once your meal is prepared, your host will show you how to plate it and eat it as Indians do. You’ll have more time for questions and conversations, and afterwards, you’ll receive you a copy of the recipe to keep so you can make it again (plus a few other dishes you can try at home).

For the masala chai
- 1 cup water
- ½ cup of milk (any kind) (optional)
- Black tea
- ½ tsp sugar (optional)
- Green cardamom (1 for 1 cup)
- Cinnamon (pinch for 1 cup)
- Black Pepper (around 4 to 6 peppercorns)
- Cloves (around 1 clove for 1 cup)
- Fresh ginger (pinch)
For the paratha (bread)
- 2 cups wheat flour
- Water
- Oil (any kind)
- Clarifying butter (or oil)
- Spices: salt, red chili powder, coriander powder, carom seeds (optional)
- Rolling pin
For the Kadai paneer/tofu
- 2-3 chopped red onions
- 4-5 tomatoes
- Ginger (pinch)
- 1 green chilli
- 2 chopped capsicums (bell peppers)
- 1-2 tbsp oil (any type)
- Spices: salt, red chili powder, dry coriander powder, turmeric powder, cumin seeds (powder will also work), garam masala (optional)
- 2 tbsp cream (optional)
- Fresh coriander leaves
- Tofu or cottage cheese
