What to expect

Learn how to prepare a typical polenta dish and find out how to combine traditional techniques with modern recipes. Create authentic and healthy dishes that will satisfy both meat lovers and vegetarians. Your cooking class will take place in the yard of a noble palace, in the very heart of the town. Indoors you will have the chance to admire a real 1600-wine press.

Pettorano's polenta is a unique dish in the panorama of Abruzzo cuisine. It is made using cornflour and involving a traditional process: with the help of a wooden stake, the polenta will be stirred in a brass pot for one hour and a half, until it will reach a solid consistency. It will be sliced and topped with a white sauce called "rognoso", made of pecorino cheese and fried bacon.
