The Typical Provence Rosé paired with Tapenade:
Traditionally tapenade is olive-based with capers anchovy and olive oil. Very popular in the South of France, it is commonly enjoyed as bread spread paired with a glass of Rosé. Provence, the very first wine region in France, will deliver its history in a wine glass from the area
Homemade Tuna and Salmon “Rillettes":
Baked to preserve the delicacy and the freshness of the fish spread on toast.
Panisses with Aioli sauce:
Those discs shape of chickpeas flour are served with an Aioli sauce. Now a Provencal specialty, but that has its origins in Italy.
Tuna and shrimp Tartare:
Chopped into tiny dice by hand, cooked by the lemon juice marinade on it, this recipe has a very refreshing quality.
Marinated Sardine:
Walk around Marseille fish Market and you will see heaps of freshly caught Sardines! That is a very delicate marinade that leaves the fish soft and velvety. Marinated in delicious extra virgin olive oil from Provence, providing wonderful evocative flavors.
Roasted Cheese with pastis:
Camembert one of the most famous French cheese. Here you'll eat it stuffed with pastis, a typical alcoholic beverage of this area, and then roasted. Try to dip a crouton in it..delicious!!
Oriental sweets:
