The tour begins at a Parmigiano Reggiano factory with a brief introduction to the historical outline of Parmigiano Reggiano cheese. Visit the local "casello” where the milk is cooked in the so-called "caldere" from which the forms of Parmigiano Reggiano are extracted. It will then be possible to access the brine room and the seasoning warehouse where you will “beat” the cheese as a Parmigiano Reggiano Consortium expert does. At the end of the visit, you will be offered a tasting of three different agings of Parmigiano Reggiano accompanied by typical mustards and local red wine.
Then reach a Parma ham factory. The visit starts from the premises where fresh pork meat is processed and where only the best legs are selected to get the famous Prosciutto di Parma. See the salting machine and the refrigeration cells. From here, move through the seasoning rooms where you’ll smell the typical scent of Parma ham, which is branded with the famous “Corona di Parma”. The tour ends with a tasting of Parma ham and Malvasia, the typical wine of the area.
